Tom pioneered a Charter for Cider and Perry producers. It is primarily concerned with the ethics and standards associated with the production. Its key aims are to: -
1. Help secure the future of UK orchards and their ecosystems.
2. Preserve the integrity of cider and perry as valuable products of recognised quality using only UK fruit.
3. Declare ingredients (with traceability), use a minimum juice content of 85%, control and minimise additives and use only natural products.
